The Bava family began their wine-growing business in 1600, in the village of Cocconato, located in the Monferrato hills in the Asti region. In 1911, they built their first cellars, which today are equipped with modern wine-making technologies. It is worth adding that the family has been a pioneer in the use of barrels in wine production since 1975. Currently, the sixth generation of the family watches over the quality of their wines, which have gained international recognition for their quality over the years.
It is worth adding that currently, the family owns 50 hectares of vineyards, which are still cultivated using traditional methods, without the use of chemicals and using only natural fertilizers. Even the poles for grape vines are made from wood from renewable forests. The producer also organizes tastings in his vineyard, which allows a wider group of recipients to get to know the quality of their wines.
Barbaresco with a recognized reputation worldwide. Produced in limited quantities, from Nebbiolo grapes from only one vineyard, with unique, shallow soils. The grapes are hand-picked, then undergo the vinification process in steel vats, then go into new oak barrels for 18 months, finishing the maturation process in the bottle. On the nose it is very complex and aromatic, red fruits perfectly combine with notes of licorice and violet. On the palate it is round and well-smoothed, the fruitiness is supported by elegant, juicy tannin and balanced acidity. The finish is long and airy, with a delicate herbal aftertaste.
It tastes best served at a temperature of 16-18 degrees. Decanting is recommended to separate the sediment and ensure the right level of aeration. In culinary combinations, it will work well with grilled beef, as well as game in delicate sauces. Italian quality cheeses will also be a suitable companion.
