The Bava family began their wine-growing business in 1600, in the village of Cocconato, located in the Monferrato hills in the Asti region. In 1911, they built their first cellars, which today are equipped with modern wine-making technologies. It is worth adding that the family has been a pioneer in the use of barrels in wine production since 1975. Currently, the sixth generation of the family watches over the quality of their wines, which have gained international recognition for their quality over the years.
It is worth adding that currently, the family owns 50 hectares of vineyards, which are still cultivated using traditional methods, without the use of chemicals and using only natural fertilizers. Even the poles for grape vines are made from wood from renewable forests. The producer also organizes tastings in his vineyard, which allows a wider group of recipients to get to know the quality of their wines.
Wine produced in the Pinoalto estate, where vineyards are situated on a hill overlooking the city of Agliano and the thermal springs. Made 100% from the Barbera grape, it perfectly reflects its character and youthful freshness. On the nose it is very aromatic, full of aromas of wild plum, black cherry jam and a delicate touch of pepper. On the palate it is very warm and full, smoothly developing flavors of red fruits combined with soft and fresh tannins, as well as balanced acidity. The finish is moderately long, with a lingering fresh aftertaste.
It tastes best served at a temperature of 18-20 degrees. Decanting is possible to ensure an optimal level of aeration and development of aromas. In culinary combinations it works well with poultry in delicate sauces, appetizers such as goose pate and soft cheeses.
