The history of today's Veuve Clicquot began rather sadly - Madame Clicquot, wife of François Clicquot, the founder's son, was widowed at the age of 27 and took over the champagne house, which she then renamed to the name known to this day. Despite her young age, she developed her business with enthusiasm, regardless of the adversities of fate and finding solutions to maintain quality, but also taking care of the business. Her motto "Only one quality. The highest." Accompanies the champagne house to this day. She is credited with many innovations in champagne production, including rotating maturing bottles by ¼ turn, legal protection of the brand, ending with the invention of the first rosé champagne and vintage editions. "From today on, I drink nothing else" - said the Russian Tsar Alexander I when he tried this champagne in 1812, which was the best recommendation, in 1814 all of Russia and the rest of the world were delighted with the batch from 1811.
The final product is obtained by blending dozens of base wines of Pinot Noir, Chardonnay and Meunier varieties, with the former dominating. The bottles are aged in chalk cellars under the city of Reims for 3 to 10 years to obtain the fullness of flavors and aromas. Veuve Clicquot is a lively and energetic champagne, suitable wherever there is a lot of emotion and joy. The wonderful composition honors many sports and cultural events.

The 1979 edition is all the more exceptional because the entire decade was not conducive to grape cultivation and this year did not look exceptional either. Due to bad weather, the grapes ripened slowly, reaching their fullness quite late. The champagne belongs to the Cave Privée line, aged a bit longer in the cellars of the Veuve Clicquot champagne house. It consists of 49% Pinot Noir, 27% Chardonnay and 5% Meunier with the addition of 19% red wine. All varieties come exclusively from the Grand and Premier Cru plots. On the nose, it is not so expressive, more elegant and subdued, notes of dark fruit are enriched with accents of saffron and a bit of curry. Very harmonious on the palate, the effervescence is dense and fine, perfectly arranged, the fruit notes perfectly match the balanced acidity. On the finish, long and slightly subdued, but still elegant, with smoky accents appearing.
It tastes great chilled, but since the wine has a lot to show, we suggest a temperature of around 11 degrees, so that it can fully and comprehensively develop in the glass. Culinary combinations, such as caviar and seafood, will not be scary to it. You can also wait a few years to open the bottle, the wine has good ageing potential.
