Finishing whisky in various types of casks has become commonplace, but the one presented here breaks away from the usual standards.
In 1868, Edmund McIlhenney developed the formula for the spicy Tabasco sauce that is still sold around the world today. Its production shares some features with whiskey production – chili peppers are crushed with salt, then the mixture is placed in bourbon barrels for three years, then mixed with wine vinegar. To celebrate its 150th anniversary, Cascade Hollow Distilling Co. has introduced a George Dickel edition finished for 30 days in Tabasco barrels. Before bottling, the alcohol content is reduced to 35%, which is why the drink is not classified as whiskey.
Nose: sweet and spicy, maple syrup, caramel, grilled corn on the cob, wine vinegar and Tabasco sauce.
Taste : consistent with the aroma, chili peppers, black pepper, wine vinegar, maple syrup, vanilla and corn.
Finish : medium long, a combination of sweet corn, brown sugar, vanilla and Tabasco sauce.
