By definition, corn whiskey must be distilled from a mash containing no less than 80% corn, at an alcohol level not exceeding 160 proof (80% abv), and maturation is not mandatory.
In the new century, the supply of corn whiskey increased due to craft distilleries, due to the relatively low production costs helping them maintain financial liquidity. However, larger players also included this type of whiskey in their offerings. George Dickel White Corn Whiskey is distilled using the No. 1 mash formula (the only one, by the way), which includes corn (84%), rye (8%) and malted barley (8%). Before bottling, it undergoes, like all Tennessee whiskeys, the "charcoal mellowing" process.
Nose : slightly alcoholic, grilled corn and cornbread, notes of vanilla and berries and a pinch of pepper.
Palate: Corn dominated, bread crust, vanilla, lemon peel, black pepper and a hint of berries.
Finish: quite short, with notes of corn, bread crust and pepper.
