Bodegas Ximénez-Spínola is a boutique winery specializing in the production of sherry and brandy wines, one of the oldest in the Jerez de la Frontera region. Since its foundation in 1729, the Ximénez-Spínola family has followed three principles in the production of its spirits, including great sweet wines: "time, patience and the ability to sacrifice". Today, the tradition and quality of the winery are cultivated by the next generation, headed by Jose Antonio Zarzana.
The flagship grape of the vineyard, from which its outstanding wines are made, is Pedro-Ximenez. The limestone soils and the proximity of the ocean make PX more subtle and elegant in relation to the wines of Montilla Moriles.

Ximénez-Spínola Old Harvest
The grapes, after being hand-picked, are exposed to sunlight for 3 days, then gathered in 15-kilogram boxes. They ferment in barrels until they reach 17% alcohol, sometimes additional concentration in the barrel is needed to reach this level. At this point, our 1964 Solera joins the wines, unique in the whole of Jerez, a white variety with notes very similar to "Palo Cortado" and "Oloroso", but with the subtle elegance of grapes never before bottled. It is not a typical sherry with a high degree of oxidation, as a result of which we feel the alcohol minimally. To avoid re-fermentation, the addition of raisin juice, which softens the wine and leaves residual sugar, is made every year very carefully, to a concentration of 45 grams per liter in the last year. Carefully selected barrels are blended for a year before bottling to preserve the predominant oxidative notes but avoid the sharpness of the oak barrels. The result is a wonderful combination of the aforementioned characteristics, while preserving the character of the PX variety.
The wine delights with its dark amber color, in the glass you can see natural "tears", indicating the fermentation origin of the alcohol. In the nose, oak aromas are first noticeable, then notes of ripe plums and raisins appear, and at the end return to noble forests. Full and round on the palate, sweetness gently dispersed by acidity. It also shows intense, but not overwhelming notes of smoke and roast, surprising on the finish with a clear almond finish.
The aging potential, if proper conditions are maintained, can reach up to 50 years.
