Product description

Bodegas Ximénez-Spínola is a boutique winery specializing in the production of sherry and brandy wines, one of the oldest in the Jerez de la Frontera region. Since its foundation in 1729, the Ximénez-Spínola family has followed three principles in the production of its spirits, including great sweet wines: "time, patience and the ability to sacrifice". Today, the tradition and quality of the winery are cultivated by the next generation, headed by Jose Antonio Zarzana.

The flagship grape of the vineyard, from which its outstanding wines are made, is Pedro-Ximenez. The limestone soils and the proximity of the ocean make PX more subtle and elegant in relation to the wines of Montilla Moriles.

Ximenez-Spinola demonstrate the extraordinary innovation of the vineyard and the great potential of the PX grape variety, and their wines can be found in the best star restaurants in the world.

 

Ximenez-Spinola Diez Mil Botellas Brandy

Brandy with a very unique production process. The distillate is placed here for maturation in 750-litre barrels made of chestnut wood, in which wine based on the PX strain had previously matured. It is worth mentioning that until 1939, chestnut was the most commonly used wood by coopers from Jerez, only the mass deforestation caused by the civil war forced them to reach for American oak. Thanks to this method, we get in the bottle a brandy that is closest to the one that was drunk in Spain until the mid-20th century. It should be mentioned that chestnut wood does not give the distillate excessively tart notes, hence during the minimum 12-year aging process, the flavours and aromas come mainly from the oxidation process.

Beautiful amber and clean color, due to the chestnut wood and the 12 years of ageing, on the nose it is very smooth with aromas of plums and raisins, typical of our Pedro Ximenez. In the mouth it is balanced, delicately sweet, with pleasant slightly tart accents of wood. The whole makes for a very rich taste experience despite the 40% alcohol content, which in this case is very well hidden.
