Bodegas Ximénez-Spínola is a boutique winery specializing in the production of sherry and brandy wines, one of the oldest in the Jerez de la Frontera region. Since its foundation in 1729, the Ximénez-Spínola family has followed three principles in the production of its spirits, including great sweet wines: "time, patience and the ability to sacrifice". Today, the tradition and quality of the winery are cultivated by the next generation, headed by Jose Antonio Zarzana.
The flagship grape of the vineyard, from which its outstanding wines are made, is Pedro-Ximenez. The limestone soils and the proximity of the ocean make PX more subtle and elegant in relation to the wines of Montilla Moriles.

Balsamic Vinegar Ximenez-Spinola
At any point during the ripening of our PX grapes, yeasts known as microderms can invade any number of barrels, causing the alcohol to convert to ethyl acetate, or vinegar. This is a consequence of the natural selection process of our PX, where we do not interfere with the contents of the barrels.
This Solera vinegar was born in 1983, when the then owner of the company, D. Jose Luis Zarzana Palma, began to select and sort the wine, without replacing the lost criaderas, which resulted in two large batches: one medium and one high acidity. The batch with higher acidity began the inexorable journey to being… wine vinegar.
José Antonio Zarzana - Winemaker Ximenez Spinola, ninth generation of the Zarzana - Spinola family: " When Pedro Ximénez wine is made from raisins, evolution does not always go as expected. There are some natural yeasts called mycoderma that sometimes develop, feeding on the alcohol and fructose in the wine, which eventually turn into acetate. From this natural acetate was born this exceptional vinegar, produced by Pedro Ximénez."
