Zapatera rums are made in Nicaragua, in the same distillery that produces Flor de Caña rums. The Flor de Caña distillery was built at the foot of the highest and most active volcano, San Cristóbal.
According to the producer, the fertile volcanic soil and microclimate created near the volcano had – and still have – a significant impact on the quality of the sugar cane grown there, and consequently, the quality of the local rum. Today, Flor de Caña, a distillery that prides itself on its unparalleled care for the environment, is still in the hands of the descendants of its founder. The distillery uses 100% renewable energy, is certified carbon neutral and Fair Trade. No sugar or artificial additives are added to the production of the rum. Distillation takes place in an extremely efficient five-column still. The distillate matures in small, 180-litre oak barrels in the tropical climate at the foot of the volcano.
Zapatera rums are spirits made from molasses and distilled in column stills. They mature for at least 4 years in barrels made of American oak (Quercus alba). Zapatera 1996 Reserva is a vintage spirit, distilled in 1996. It was made from molasses and distilled in a rectifying column. Edition from a single barrel.
Aroma : Vanilla, chocolate, coffee, roasted nuts, burnt sugar, pepper.
Taste: Dry, notes of vanilla, coffee, chocolate, oak, spices.
Finish : Medium long, notes of oak, vanilla, and a slight saltiness.
