Copper Fox Distillery, located in Sperryville, Virginia, was built in 2005 by Rick Wasmund.
The facility is equipped with two small stills, and also has a small malt house where the barley grain is malted using fruit and oak wood. Copper Fox Rye is distilled from a unique mash formula – 2/3 locally grown rye and 1/3 malted barley, of which 60% is smoked with apple wood and 40% with cherry wood. The lack of corn in the mash formula is immediately noticeable. The Rye Spirit presented here is a fresh distillate that came off the stills on March 27, 2013 and was aged for less than 30 days.
Aroma: rye spiciness, citrus peel, apples, cherries, nutmeg, dried dill and a drop of tequila.
Taste : slightly oily, fruity and spicy, apples, cherries, orange peel, herbal mixture, rye bread and a dying campfire.
Finish: medium long, with notes of rye spiciness, zesty citrus and charred wood.
