W. & J. Graham's, one of the most distinguished producers of port, was founded in 1820 and was one of the first to invest in the purchase of vineyards in the famous Douro Valley. Since 1970 it has been owned by the Symington family, with Scottish, English and Portuguese roots, associated with port production for centuries. One of their most famous editions was Graham's 90, a blend of the 1912, 1924 and 1935 vintages released to celebrate Queen Elizabeth II's 90th birthday. W. & J. Graham's Blend No. 5 White Port is made from Malvasia Fina and Moscatel Gallego grapes. The grapes are subjected to cold fermentation at controlled sugar levels. When this reaches the desired level, grape alcohol is added, which kills the yeast and consequently stops the fermentation. White port is typically aged in oak barrels, but that rule is not true for Graham's Blend No. 5; to preserve its floral and fruity character, it is bottled almost immediately after the distillate is added.
The idea of the creators of W.&J. Graham's Blend No. 5 was to create competition for gin. Indeed, in the countries of the Iberian Peninsula it is a very popular aperitif served with tonic, a slice of lime and a mint leaf. The recommended serving temperature is 6 to 10ºC.
