Sonoma County Distilling Company was established in 2010.
Its founder, Adam Spiegel, describes himself as a “grain to glass operation” – almost every phase of production is carried out in-house, from milling the grain, through mashing, fermentation, distillation in a copper still, maturation and bottling. Adam avoids genetically modified grains and relies on locally grown grains, only bringing in barley from Wyoming and rye malt from England. The name of the “Second Chance” presented here refers to the barrels previously used to mature his own bourbon and rye whiskey. The whiskey is distilled from a mash of 80% wheat and 20% malted rye and aged in the aforementioned barrels for over a year.
Nose: freshly baked bread, caramel, vanilla pods, lemon and orange peel, raisins, ginger, a pinch of pepper and oak.
Taste : slightly spirituous, sweet cereal flakes, milk fudge, caramel with a grain of salt, lemon jam, pepper, ginger and oak.
Finish : medium long, alcoholic, with notes of caramel, milk chocolate, pepper, ginger, citrus and oak.
