Mezcal Nucano is a venture by two mezcal enthusiasts, natives of the Mexican state of Oaxaca. They have established cooperation with local mezcal producers from Oaxaca, creating for them not only a sales network, but also production support and supply. An important element of this cooperation is leaving the mezcal production process itself in its artisanal, local form, without any external interference, while promoting local mezcal on Mexican and world markets. Mezcal Nucano Espadin Anejo is a spirit produced from the heart of the Espadin agave in the town of San Dionisio Ocotepec. Agaves of this variety, used for mezcal production, must grow for at least 8 years before they reach maturity. They are baked in hearths dug in the ground, crushed with a traditional stone wheel, called tahona. Fermentation takes place in pine vats and double distillation in traditional copper stills, fired with wood. This mezcal matures for 3 to 5 years in American bourbon oak barrels.
Aroma : Accents of cherry, vanilla, cranberry, coffee and dark chocolate.
Palate : Agave, citrus fruits, chocolate, olives, vanilla, coffee, light smoke.
Finish : Long, dry and slightly smoky.
