The roots of Chabasse cognac date back to the early 19th century, when Jean-Baptiste Chabasse purchased an estate with several hundred hectares of vineyards and a small distillery.
At the turn of the century, the family business was inherited by Louis Olivier Chabasse, a great travel enthusiast. His great-great-grandson, Réne-Luc Chabasse, who currently runs the family business, offers cognacs blended with eaux-de-vie from the Petite Champagne, Borderies and Fins Bois regions. Their prices range widely – from around 30 euros for the Chabasse VS de Luxe version to 6,000 euros for Chabasse Baccarat, an old cognac offered in a unique presentation. The Chabasse XO presented here is a blend of eaux-de-vie from the Petite Champagne and Fins Bois growing regions aged for 18 to 20 years.
Aroma: floral, violets, irises, plums, black cherries, hazelnuts and walnuts, milk chocolate, vanilla, a touch of cinnamon, traces of potpourri and oak.
Palate: chocolate-coated hazelnuts, dried apricots, orange peel, plums, raisins, vanilla, marzipan, notes of allspice and oak tannins.
Finish: very long, with notes of sweet dried fruit, roasted nuts, chocolate, a pinch of spice, dried flowers and oak.
