Eden Mill commenced operations in 2012 as the first Scottish brewery and distillery producing whisky, gin and beer.
The company is based in St Andrews, a famous golf resort, not far from where the Haig family's Seggie Distillery operated from 1810 to 1860. Eden Mill is equipped with three Portuguese copper stills and has a production capacity of 80,000 litres of distillate per year. Eden Mill Oak Gin is the result of the combined skills of five distillers and brewers. Its key ingredients are juniper berries, angelica and coriander, and the finished gin is matured for several months in home-made beer barrels before being bottled at 42%. Eden Mill currently offers five gins, all offered in imitation editions. Local botanicals, flowers, herbs and berries are incorporated into the formula depending on the season.
The aromatic bouquet of Eden Mill Oak gin is dominated by oak tones complemented by vanilla and caramel. The taste also includes vanilla and oak, traces of honey, cinnamon and citrus. The producer recommends serving it with ginger ale and a slice of orange.
