Jawbox Gin is the brainchild of long-time Belfast bartender Gerry White.
Its name refers to the special sink that occupied a central place in the kitchens of old Irish homes and was the focal point of social life. The gin is produced at the Echlinville Distillery on the Ards Peninsula, near Belfast. Its formula lists 11 botanicals – juniper berries, local heather, coriander seed, cassia thorn, angelica root, orris root, cubeb pepper, lemon peel, cardamom, liquorice root and grains of paradise. The base of the gin is grain spirit distilled in a traditional copper pot still. Before the final distillation, the botanicals are steeped in slightly warm spirit to extract the maximum aromas and flavours. Jawbox Dry Gin debuted in 2016 and has enjoyed considerable popularity in Ireland.
In the aromatic bouquet we find intense notes of juniper and pine needles, a bit of coriander and citrus. On the palate juniper and citrus, a bit of pepper and herbs and delicate notes of forest floor. Jawbox is a very expressive gin, tastes great with both tonic and ginger ale; we also recommend it in classic cocktails, e.g. Negroni, Tom Collins or Gimlet.
