Paranubes Rum is produced in a small distillery currently run by a third-generation distiller from the village of Rio Tuerto in the Mexican state of Oaxaca.
This rum, or rather aguardiente de caña, a drink similar to the otherwise well-known rum agricole, is made from fresh sugar cane juice, and not, as is quite commonly accepted, from molasses. After 48 hours of fermentation in an open wooden vat, only half of the contents is distilled in a copper column, and the other half remains in the vat. The vat is topped up the next day - and the cycle repeats. Thus, there is continuous fermentation in the fermentation vat, interrupted only once every 4 months to empty and clean the fermentation vat. The rum is never diluted before bottling, and only distillates of different strengths are mixed to achieve the 54% indicated on the label.
Rum Paranubes is a category of its own, an extraordinary drink, often placed somewhere between rum agricole and cachaça. In its bouquet we can find fruit accents (fresh apricots), mint, notes of cane juice, plant accents, grassy, and also some notes of exotic fruits (lychee).
