The Windspiel (German: "Chart") company was founded in 2008 on the initiative of Sandra Wimmeler.
Denis Lönnendonker and Tobias Schwoll (its name is a nod to Frederick the Great, who popularized potatoes in Germany and was also a great admirer of greyhounds). The partners bought the Weilerhof farm in western Germany where they began growing potatoes. Soon the idea of distilling alcohol from them came and with the participation of master distiller Holger Bolchers and two years of experimentation the gin formula was ready. The potato mash is distilled twice in a large distillation column and then again in a small one to obtain the purest possible alcohol. The ingredients of the gin recipe remain the creator's secret, revealed are juniper berries, lemon peel, coriander, lavender, ginger and cinnamon. They are macerated and then distilled either individually or several together and then blended. In 2016 Windspiel Premium Dry Gin won a silver medal in the International Spirit Challenge competition.
In the aromatic bouquet, Windspiel Premium reveals a strong scent of juniper masterfully balanced with citrus zesty, notes of cinnamon and ginger. In the palette, the taste of pine needles, lemons, coriander, licorice and black pepper enriched with floral notes of lavender. The company also produces its own tonic, and the "perfect" Gin & Tonic is served with a slice of lime.
