The origins of Emilio Lustau SA date back to 1896, when the president of the district court, José Ruiz-Berdejo, began cultivating vines on the family estate of Nuestra Señora Esperanza.
He sold his wines to local sherry producers. In the 1940s, his daughter and son-in-law moved the company to the historic part of Jerez de la Frontera and within a few years entered the market with their own wine range. In 1990, Lustau SA merged with another family company, Luis Caballero, and is the leading sherry producer in the Luis Caballero Group. It has three wineries in three cities in the so-called "sherry triangle" - Jerez de la Frontera, Puerto de Santa Maria and Sanlúcar de Barrameda.
Lustau Amontillado Los Acros is produced from 100% Palomino grapes and aged for 8 years – four years under a layer of yeast (flor) and another four oxidatively. The entrance to the Plaza del Cubo winery, where the maturation of this sherry takes place, is formed by two arches bearing the names of Emilio Lustau’s daughters-in-law – Arco de Zuri (wife of Emilio Lustau Ruiz-Berdejo) and Trini (wife of José Luis Lustau Ruiz-Berdejo). "A dry Amontillado that has acquired classic nutty notes during its extended maturation period - amber in color with a strong hazelnut aroma. Delicate on the palette and perfectly balanced with a long finish. Served at a temperature of 13-14ºC, best with asparagus, artichokes or mushroom risotto."
