The hero of the tenth anniversary edition of Glenmorangie Private Edition is not the barrels or a particular variety of barley, but the yeast.
During a routine walk around the fields surrounding the distillery, Dr Bill Lumsden took a sample of Cadboll barley and, in a laboratory test, discovered a ‘wild’ strain of yeast on it, which turned out to be perfectly suitable for distillation. This barley and the cultivated yeast strain were used to create the Allta (Gaelic for ‘wild’) edition. The whisky was matured in ex-bourbon barrels, mainly second fill, to limit the influence of the oak on the whisky’s palette. Allta is perhaps the only single malt to reveal the role of yeast in shaping the whisky’s palette.
Aroma: yeasty, yet floral and fruity, bread dough, roasted grain, violets, raisins, oranges, red berries, vanilla, biscuits, a trace of pine needles.
Palate: toasted breakfast cereals, fresh bread with butter, vanilla, toffee, milk chocolate, orange peel, apples, pine nuts, a touch of oak, pepper and mint.
Finish : medium long, with notes of milk fudge, bitter orange jam, oak and peppermint.
