Springbrook Farm Distillery is located in Queensbury, New York, in the foothills of the Adirondack Mountains.
The distillery began distilling in the summer of 2014 and currently produces vodka, gin, liqueurs, bourbon and rye whiskey. The distillery uses locally grown grain, which covers 75% of its needs. The water used in the production process comes from the Adirondack Mountains and is brought in through a system of wooden pipes dating back to the late 18th century. Adirondack High Rye Bourbon is distilled in a copper pot still from a mash of “high rye” (the company does not disclose details) and aged for at least two years. It debuted in 2016 and immediately won a silver medal at the New York State International Spirits Competition.
Aroma: sweet and fruity, vanilla, caramel, apples, peaches, raisins, traces of cocoa and oak.
Taste: slightly spirit-like, vanilla, toffee, butter cookies, orange peel, delicate notes of rye and oak.
Finish: medium long, with notes of toasted rye bread, vanilla, caramel and oak.
