Adirondack Distilling Company was founded in 2011 by Bruce Elwell, Steve Cox and Jordan Karp in Utica, New York.
The state’s regulations are very friendly to craft distilleries, and there are currently 120 in operation. Adirondack Distilling Co.’s first offering was vodka; its bourbon debuted in 2014; its name refers to the distillery’s address, 601 Varick Street. The Adirondack 601 Bourbon on display here is distilled from 100 percent locally grown corn and aged “less than four years” in new, charred oak barrels. It won a silver medal at the 2015 World Spirit Competition in San Francisco.
Nose: light and sweet, slightly alcoholic, sweet corn, vanilla, caramel, breakfast cereals and a hint of hay.
Palate : cornflakes, buttered toast, vanilla, caramel, white pepper, traces of hay, garden herbs and oak.
Finish: not too long, with notes of cornflakes, herbs and oak.
