In the 1950s, there were two rum distilleries on the island of Saint Lucia. They joined forces in 1972 to create Saint Lucia Distillers Group, a company that currently operates the only distillery operating on the island, located in the Roseau Valley. In 2007, part of the distillery was destroyed by fire, losing its laboratory and the building where the rum was blended. The island's sugar cane plantations were eventually replaced by banana plantations, forcing the distillery to import raw material from Guyana. However, the company recently purchased five acres of land on which it started a sugar cane plantation.
Chairman's Reserve Original Spiced Rum is a traditional rum seasoned with spices for a more intense flavor. Its bouquet includes caramel, cinnamon, cloves, a bit of honey and oak. Rye distillate is made in two stills, a column still (Coffey) and a column still (pot still) - giving it both lightness and depth. Young rums are first aged in Bourbon barrels to acquire vanilla and oak notes. Then they are combined into a harmonious composition, which is enriched with a mixture of local spices, such as cinnamon, cloves and "Bois Bande" bark - an aphrodisiac wood from the Caribbean. The whole thing is macerated for half a year in oak vats so that the aromas blend with the alcohol, and the final drink is filtered by hand, preserving its mahogany shine.
Rum works well both as a drink on its own and as a base for cocktails.
