Tequila Espolon is a product of the San Nicolas distillery, located in San Ignacio Cerro Gordo in the Mexican state of Jalisco.
The local master distiller, Cirilo Oropeza, says that playing rock music while fermenting roasted agave helps “inspire” the yeast to work better. Distillation takes place in a rectifying column and stainless steel stills with copper coils. The bottle and label design, updated a few years ago, features the Ramón rooster and the skeletons of Guadalupe and Rosarita, legendary heroes of Mexico’s fight for independence. The Espolon Blanco edition is bottled immediately after distillation, skipping the oak barrel aging process. This makes the colorless drink perfect for cocktails.
Nose : Roasted agave, alcohol notes, black pepper, citrus, vanilla, fresh grass, white pepper, buttery accents.
Palate: Roasted agave, black pepper, citrus, vanilla, white pepper, cinnamon, mineral notes.
Finish: Medium long, with mineral accents.
