Sipsmith Distillery was established in 2009 and was the first distillery to open in London in almost 200 years.
Its founders, Sam Galsworthy and Fairfax Hall, had previously worked in the spirits sector, but had no direct involvement in distilling. Jared Brown came on board as a consultant and then became the distiller. He was inspired by a formula discovered in an 18th-century book, The Art of Distilling, which in its modern form consists of ten botanicals from around the world – Macedonian juniper, Seville orange peel, Spanish lemon peel, Italian orris root, Belgian angelica root, Madagascar cinnamon, Chinese cassia bark, Spanish almonds and Bulgarian coriander. They are then macerated for 14 hours (in the case of VJOP, it can take up to three days). Sipsmith gin is distilled in small batches of around 400 bottles. In 2015, the company won a tender to supply gin to the British House of Commons.
Sipsmith London Dry Gin has a classic aromatic bouquet, in which the main role is played by juniper and orange zest supported by notes of licorice and coriander. In the palette, the taste of bitter oranges and pine needles is beautifully intertwined with cinnamon and licorice. We recommend serving it with tonic and lime or in Martini and Aviation cocktails.
