Papa's Pilar Distillery is a rum distillery located in Key West, Florida and closely associated with Ernest Hemingway, the great American writer, traveler, nature lover, socialite and gourmet.
The distillery was named after Hemingway's famous boat, the Pilar, on which he regularly went fishing. To him, it was much more than just a fishing boat. As the producer says, Papa's Pilar rum was created to harness the same spirit of adventure that Hemingway's favorite boat is associated with. Papa's Pilar rums are made using both distillate produced in its own distillery in Key West, as well as rums imported from other producers in the Caribbean. Papa's Pilar rums include distillates from Barbados, the Dominican Republic, Panama and Venezuela.
Papa's Pilar 24 Spanish Sherry Casks is a blend of 9 rums from Barbados, Venezuela, Dominican Republic, Panama and Florida. The individual distillates were blended and then transferred to oloroso sherry casks for final maturation.
Aroma: Nuts, toffee, oak and roots.
Palate: Oak, fruit, caramel, toffee, sherry, nuts, oak, spices.
Finish: Long, with notes of oak, nuts, raisins and spices.
