Hinotori 5-year-old Blended Japanese Whiskey / 43% / 0.7l

Hinotori is a somewhat mysterious whisky from the Land of the Rising Sun. It is owned by Aioi Unibio, a producer of sake and shochu, as well as Rainbow and Kinuura whiskies.

Hinotori debuted in 2019, on the 70th anniversary of the company's first distillation of whisky, which was abandoned after more than a decade due to the destruction caused by two typhoons - Tess in 1953 and Vera in 1959. The name of the whisky "Phoenix" (Hinotori in Japanese) is to symbolize the rebirth of Aioi Unibio as a producer of this whisky. The formula of Hinotori remains a secret of the producer, we only know that it contains malt and grain whisky aged in oak barrels for at least five years.

Aroma : mild, malty and fruity, sweet cereals, apples, pears, peaches, vanilla, sugared nuts, a pinch of cinnamon and oak.

Palate: fresh, vanilla, brown sugar, sponge cake, toffee, baked apples, nectarines, roasted nuts and a hint of oak.

Finish: medium long, with notes of vanilla, honey, summer fruits, traces of nuts and oak.
