The winery is located in the town of Sotillo de la Ribera, in the province of Burgos, on the northern bank of the Duero River basin; its vineyards are situated at elevations ranging from approx..830 to 930 m above sea level.p.m. It has approximately 54.8 hectares of its own farmland spread across 27 plots with a wide variety of soil types—ranging from calcareous soils to gravelly and sandy-gravelly soils to clay-rich valleys.Since 2022, all of their vineyards have been certified organic, and fermentation is carried out using indigenous yeasts to better express the local terroir.The winery uses hand-harvesting, selection on two sorting tables, and gravity transfer (without pumping) to preserve the fruit’s integrity as much as possible.They primarily grow Tinto Fino (a local variety of Tempranillo), as well as smaller quantities of Garnacha, Albillo Mayor, and Merlot, striving to ensure that their wines reflect the unique character of each plot in the vineyard.
Félix Callejo 2016 is made from the Tinto Fino grape variety (a local variety of Tempranillo) grown on the MedioArroyo and Montecillo plots, located on limestone soils at an elevation of 900–920 m above sea level.p.m.The grapes are harvested by hand into 12-kg crates, sorted twice on tables, and fermented using indigenous yeasts and a gravity-fed system without pumping.The wine ages for 18 months in barrels of various sizes, which helps achieve a balance between fruit and the integration of oak.
Appearance: cherry-red color with a navy blue rim.
Aroma: intense, dominated by notes of ripe fruit (blueberries, cherries), spices (cloves, herbs, rosemary), balsamic accents, and a light hint of vanilla and cedar.
Flavor: full-bodied, well-structured — the palate reveals fruit, spices, chocolate notes, ripe tannins, and a long finish.
Culinary pairings: great with meat dishes—roast lamb, steaks, game, grilled meats, stews, and aged cheeses.
