Dauphin is a brand based in the small town of Yvetot in the Seine-Maritime department in Normandy.
They create Calvados in the distillery in Coquainvilliers, exclusively from apples from Pays d'Auge. Almost 20% of the apples come directly from their own crop. The fact of the location, origin of the raw material and meticulous adherence to standards means that Dauphin can boast the Appellation d'Origine Contrélée Calvados certificate. The alcohol is twice distilled in traditional copper stills. It matures in oak barrels, in cellars at a temperature of about 13 °C. This is also the drinking temperature, suggested by the producer. Dauphin Fine is characterized by a minimum maturation in oak barrels for at least 2 years.
