Baker's Bourbon debuted in 1992, alongside Knob Creek and Basil Hayden's, and joined Jim Beam's original Small-batch series.
The whiskey is named after Baker Beam, Booker Noe's cousin, who began working at the family distillery in Clermont as a night watchman and ended up as a distiller. The label reads the patron's statement: "my bourbon, in our tradition, contains all the family secrets in the bottle, not on the label; they are the secrets and experiences of six generations of distillers, waiting to be discovered again." Baker's is aged for 7 years and bottled at the patron's preferential strength of 107 proof. While the barrels used in Booker's bourbon editions always come from the middle floors of the warehouses, Baker's uses a small number of barrels from the top floor.
Nose : rich and powerful, dried fruit, cinnamon, cloves, pepper, cocoa powder, toasted rye bread, vanilla, caramel, charred oak and a bit of leather.
Palate: sweet and spicy, crème brûlée, toffee, vanilla, toasted almonds, cinnamon, cassia, cloves, notes of tobacco, leather and charred oak.
Finish : long and full, with notes of caramel, cocoa, vanilla, bitter orange jam and charred oak.
