According to the Heaven Hill Distillery statement, Mellow Corn is the only Bottled-in-Bond corn whiskey available.
To be labeled ‘Bottled-in-Bond’ the whiskey must be the product of one distillation season at a single distillery, aged in a bonded warehouse under U.S. government supervision for at least four years and bottled at 100 Proof (50% abv). The label has to clearly identify the distillery where the whiskey was distilled and where it was bottled, if different. Mellow Corn is distilled from mash of 90% corn and 10% rye and malted barley and aged for four years in used American oak barrels. Heaven Hill Distillery is one of the very few producers (and the only commercial one) of traditional corn whiskey.
Nose: cooked corn, vanilla, plantains, bubble gum, roasted peanuts, light oak and dash of ginger.
Palate: follows the nose, corn, vanilla, dried banana chips, toffee, oak, mixed nuts, toasted oak and mixed spice.
Finish: medium long, slightly spirity, with notes of corn, vanilla, pepper and oak.
