The Kavalan Distillery, which welcomes over a million whiskey enthusiasts each year, is located in Yilan County, Taiwan.
Built in 2005 by King Car Industrial Company, it won 180 medals and awards during its first decade of operation, which in 2015 prompted the owners to increase production capacity from 1.5 to 4.5 million liters. By 2017, the number of stills had already reached 20, and the distillation capacity was nearly 10 million liters of alcohol per year. The Solist series, consisting of single-cask editions, debuted in 2009 and is undoubtedly the crème de la crème of the company's lineup. The Solist presented here comes from an Oloroso sherry cask, No. S 140813013A, whose contents yielded 345-liter bottles of whiskey at 58.6% ABV.
Aroma: rich, dried apricots, raisins and sultanas, honey-roasted almonds, vanilla, toffee, cocoa powder, nutmeg, and sherry-soaked oak.
Flavor: slightly oily, strong notes of sherry, dark chocolate, crème brûlée, raisins, prunes, bitter orange marmalade, hazelnuts, cinnamon, and hints of tobacco and oak.
Finish: quite long, with notes of dark dried fruit, chocolate, nuts, toffee, nutmeg, a hint of pepper, sherry, and oak.
