Product description

Château Pavie is a prestigious estate in Saint-Émilion whose history dates back to Roman times; it currently comprises approximately 32 hectares of vineyards and has been classified as a Premier Grand Cru Classé A since 2012 in Saint-Émilion.In 1998, Gérard Perse purchased the estate; he carried out a thorough modernization, increased the planting density, reduced the yield, and adopted modern winemaking techniques, often with the assistance of consultant Michel Rolland.Pavie also produces second wines (Les Arômes de Pavie, Esprit de Pavie), but its “Grand Vin” is the flagship representative of the Bordeaux Right Bank style—concentrated, long-lived, and combining power and sophistication.


The 2019 vintage strikes a balance between power and precision—the blend consists of approximately 50% Merlot, 32% Cabernet Franc, and 18% Cabernet Sauvignon, and was aged in about 80% new French oak barrels.This wine is characterized by its high density and structure, with pronounced aging potential—its layers of aromas and nuances continue to develop as it ages.Reviewers point to an elegant balance between fruit, oak, and minerality—this is not an extremely aggressive wine, but rather one that is harmonious in its intensity.

Appearance:
The wine has a very deep, purple-navy color—with an almost navy-black center—and high intensity.
The bouquet opens with aromas of dark fruits (black cherries, blackberries, cassis), followed by notes of tobacco, dark chocolate, and violets, with a subtle undertone of earth, graphite, and a hint of spices.

Taste: Full-bodied, concentrated, and structured on the palate—the tannins are firm and well-integrated, the acidity maintains freshness, and the fruit (black currant, plum) harmonizes with oak and mineral notes.A long finish, with a hint of spice and subtle terroir notes.

Food Pairings: It pairs perfectly with bold dishes—roast lamb, game, aged steaks, rich sauces (Bordelaise, demi-glace), as well as mature hard cheeses such as Comté, Cheddar, or aged Pecorino.
