The winery is located in the town of Sotillo de la Ribera, in the province of Burgos, on the northern bank of the Duero River basin; its vineyards are situated at elevations ranging from approx..830 to 930 m above sea level.p.m. It has approximately 54.8 hectares of its own farmland spread across 27 plots with a wide variety of soil types—ranging from calcareous soils to gravelly and sandy-gravelly soils to clay-rich valleys.Since 2022, all of their vineyards have been certified organic, and fermentation is carried out using indigenous yeasts to better express the local terroir.The winery uses hand-harvesting, selection on two sorting tables, and gravity transfer (without pumping) to preserve the fruit’s integrity as much as possible.They primarily grow Tinto Fino (a local variety of Tempranillo), as well as smaller quantities of Garnacha, Albillo Mayor, and Merlot, striving to ensure that their wines reflect the unique character of each plot in the vineyard.
Parajes de Callejo 2022 is a blend (ensamblaje) consisting of approximately 85% Tinto Fino , 10% Garnacha , and 5% Albillo Mayor , sourced from plots on the páramo and hills of Sotillo de la Ribera.The soils are mainly calcareous (franco-arcilloso and calizo) mixed with sandy-clay soils, with vineyards located at elevations between 890 and 930 m above sea level.p.m.The grapes are harvested by hand, with careful sorting (double sorting), and the grapes are fed into the winery by gravity, without pumping.Fermentation is carried out using natural yeast, and the wine is then aged for 18 months in shared concrete tanks, foudres, and fûts (500 L)..

Aroma: a blend of dark fruit aromas (blackberry, black currant), spicy notes, herbs, and light balsamic and mineral tones.
