Hinch Distillery has been operating since December 2020, although it did not officially open until April 2021. The distillery buildings are situated on the Killaney Estate in the town of Ballynahinch, south of Belfast.
It has three stills and distills malt and pot still whiskey. The driving force behind the project is Dr. Terry Ross, a businessman and KBE, who also owns the Château de la Ligne vineyard in Bordeaux (the main grape varieties are Cabernet Sauvignon and Merlot). The triple-distilled single malt presented here, most likely from the Bushmills distillery, after 19 years of maturation in American oak barrels, was finished for another six months in Château de la Ligne Grande Reserve barrels. The set also includes a bottle of the aforementioned wine, 2018 Vintage. 1,750 sets were sold.
Nose: rich, red apples, plums, red berries, peaches, banana cake, vanilla, milk chocolate, white pepper, notes of cinnamon, licorice and leather.
Palate: toffee, vanilla, caramel, honey, milk chocolate, blackberries, plum jam, red apples, cinnamon, candied ginger and a pinch of white pepper.
Finish: quite long, with notes of toffee, vanilla, summer berries, Hungarian plums, cocoa, white pepper and toasted oak.
