Sales of Dalmore single malt have increased by around 300% over the past decade, reaching 2.8 million bottles in 2022. The distillery has been in operation since 1839, based in Alness in the northern Highlands, and is currently expanding.
Once completed, distillation capacity will double to 9 million litres of spirit per year. The Dalmore single malt character is often attributed to the use of sherry casks in the maturation process, although the majority of the distillates start this phase in bourbon casks. The whisky presented here, distilled in 2008, after years spent in American oak casks, was finished in Matusalem and Pedro Ximénez sherry casks. The whisky was bottled at 45.8% abv, natural colour and without chill filtration in 2023 as part of The Dalmore Vintage Collection.
Nose: vanilla, caramel, sweet bread, honeyed almonds, milk chocolate, oranges and tangerines, sultanas, black pepper and sherry-soaked oak.
Palate: mocha, marzipan, Manuka honey, vanilla, almond croissant, orange jam, raisins and sultanas, cinnamon, black pepper and a hint of pipe tobacco.
Finish: medium long, with notes of honey, vanilla, milk chocolate, cinnamon, orange peel, sherry and oak.
