The Ultimate Whisky Company is a Dutch company based in Amersfoort that has been very active recently. Founded in 1994 by Han and Maurice van Wees, it initially specialised in miniature editions.
The Ultimate whiskies are bottled without chill filtration at either cask strength or 46% ABV. The Ultimate Whisky Company can now boast over 1,000 editions. The Ballechin presented here was distilled at the Edradour Distillery on 3rd August 2011 and aged in a second-fill sherry butt (no. 271) for over 10 years. Bottled at 60% ABV on 14th August 2021 in an edition of 623 bottles.
Nose: peat smoke, grilled pork neck, caramel, milk chocolate, dried figs, orange peel, smoked plums, a dash of barbecue sauce, sherry and oak.
Palate: slightly alcoholic, peat smoke, sherry, honeyed almonds, toffee, bitter orange jam, plums, raisins, notes of tobacco and leather.
Finish: long, with notes of peat smoke, dried fruit, salted caramel, roasted nuts and almonds, a touch of cinnamon and oak.
