In 2008, Irish-born Pears Lyons registered a distillery in Lexington, Kentucky, which, equipped with two copper stills, began producing whiskey four years later.
It is marketed under the Town Branch brand, currently in three forms – bourbon, rye and malt whiskey. The name “Town Branch” refers to the branch of the river that flows through Lexington, around which the city is built. Town Branch Bourbon is distilled from a mash of 72% corn, 13% rye and 15% malted barley and presented in the original rectangular bottle. In 2012, Lyons also began distilling in his native Ireland. He died suddenly in 2018, leaving the business to his wife Deirdre and son Mark.
Nose: a bunch of fresh herbs, grilled corn on the cob, vanilla, brown sugar, pears, peaches, orange peel and light grassy notes.
Palate: caramel, vanilla, pears, apples, orange peel, white pepper, a touch of thyme and oregano and toasted oak.
Finish: medium long, with notes of vanilla, caramel, white pepper, fresh herbs and oak tannins.
