- Gouden Carolus single malt is a brainchild of Charles Leclef, the owner of Brouwerij Het Anker.

Gouden Carolus whisky debuted in 2008 in the offering of Charles Leclef, owner of the Het Anker brewery in Belgium.
Leclef used the mash used to make Gouden Carolus Tripel Beer, excluding the hops from the formula. His whisky was very well received and soon Leclef built a new distillery on the Molenberg family estate in Blaasfeld. The whisky is distilled in traditional copper stills and aged for around 30 months in fresh bourbon barrels, before being aged for at least 6 months in so-called Anker casks (reconditioned and re-fired barrels). The Stokerij De Molenberg (Gouden Carolus) Folle Blanche presented here was released in 2022 to celebrate the 9th anniversary of the new distillery. The whisky was finished in cognac barrels and the edition consisted of 16,000 bottles.
Aroma: fruity, slightly floral, oranges, grapes, limes, kiwi, honey, vanilla, a touch of allspice, notes of hay and potpourri.
Taste: consistent with the aroma, vanilla, honey, ripe grapes and pears, orange peel, a mixture of dried herbs, notes of leather and oak.
Finish: medium long, with notes of vanilla, milk chocolate, grapes, hay and a delicate oak bitterness.
