Rabbit Hole whiskey is the brainchild of Kaveh Zamanian, a former psychiatrist who discovered his life's calling as a whiskey producer in 2012.
Zemanian developed his own mash bills and initially hired a Kentucky distillery (we don’t know which one) to make them. In October 2016, Rabbit Hole whiskeys went on sale, and less than a year and a half later, Zamanian began distilling at his own distillery in Louisville. Rabbit Hole Cavehill bourbon is distilled in small batches from a mash bill of 70% corn, 10% wheat malt, 10% barley malt, and 10% honey barley malt. The bourbon is aged in small oak barrels and bottled at 47.5% abv.
Nose: mild and sweet, grilled corn on the cob, caramel, vanilla, cinnamon, raisins, red berries, mint leaf and delicate oak notes.
Taste: honey cereal, milk fudge, caramel, vanilla, orange peel, strawberry jam, agave juice and a bit of dried herbs.
Finish: medium long, with notes of toffee, caramel, vanilla, raisins, a pinch of white pepper and toasted oak.
