The Dingle Whiskey Distillery was founded in 2012 by Olivier Huges, Liam LaHart and Peter Mosley, owners of Porterhouse Brewing Company.
Distillation of vodka and gin began in October 2012, and the first barrel of whiskey was filled on December 18 of that year. Exactly three years and one day later, Dingle Single Malt Whiskey debuted. Dingle Lá 'le Bride is a triple-distilled single malt whiskey aged in bourbon barrels and finished in rye whiskey barrels. This is the second edition of the "Wheel of the Year" series, referring to the ancient Celtic calendar based on holidays celebrating the connection between man and nature. There were eight such holidays, and each of them heralded a change of season, weather and the nature around us. Dingle Lá 'le Bride was released in early 2023, and the edition consisted of 10,000 bottles.
Nose : sweet, fruity, honey, brown sugar, vanilla pudding, red apples, raspberries, nougat, a handful of fresh herbs, notes of fresh wholemeal and oak.
Palate : milk chocolate, caramel, milk fudge, vanilla, raspberries, strawberries, candied ginger, thyme, mint, rosemary and light notes of nuts and oak.
Finish : medium long, with notes of red berries, honey, toffee, herbs, wholemeal and oak tannins.
