The Virgin Oak Series debuted in October 2020 with three GlenAllachie whisky editions finished in virgin barrels made from different types of oak – French, Spanish and Chinquapin –
The whiskies spent their primary maturation period in American oak barrels. Commenting on the new series, Billy Walker stated that his goal was to demonstrate differences in the aromatic and flavor palettes resulting from the origin of the oak, the length of drying of the staves, and the level of roasting and charring of the barrels. The 10-year-old presented here was part of the third series released in spring 2023. The whisky was finished in Spanish oak (Quercus Robur) hogshead barrels from the Cantabrian Mountains, where the climate is cool and humid. The staves were air-dried for 18 months. Colour: mahogany.
Nose : A wonderful combination of orchard fruit, kitchen spices and toffee pudding, with notes of brown sugar, cherries in syrup and citrus.
Palate: An eruption of chocolate, coffee and heather honey balanced by notes of ginger, pepper and molasses; sultanas and bananas appear in the finish.
