Tobermory is one of a handful of working Scottish distilleries with a history spanning four centuries – established in 1798, it is now owned by Burn Stewart Distillers and, with a single pair of stills, can produce one million litres of spirit a year.
The production is divided equally between two single malts – Tobermory and Ledaig (the latter is a whisky distilled from malt with a phenol concentration of 35-40 ppm). Tobermory 25 years old is the third edition of the prestigious Hebridean Series. The whisky spent the last nine years of maturation in González Byass Oloroso sherry casks, and was bottled in early 2023 at 48.1% abv without chill filtration, in an edition of 5,298 bottles.
Nose : freshly baked bread, milk chocolate, milk fudge, honeycomb, candied orange peel, hazelnuts, cinnamon, cocoa powder and sherry-soaked oak.
Taste : slightly oily, rum-soaked raisins, peaches, blackcurrant jam, dried plums, milk chocolate, honeyed almonds, coconut flakes, cinnamon and mint leaves.
Finish : quite long, with notes of dried plums, raisins, chocolate, roasted nuts and almonds, nutmeg, cinnamon and oak.
