In 2003, Burn Stewart Distillers purchased the Bunnahabhain Distillery and Black Bottle blender from the Edrington Group for £10 million.
The distillery, equipped with two pairs of stills, can produce 2.7 million liters of alcohol per year, and production is divided into “unpeated” (65%) and “peated” (35%), the latter distilled from malt with a phenol concentration of 35-45 ppm. Official “peated” editions of Bunnahabhain are released as Mòine, while independent publishers use the Staoisha brand (named after the Staoisha Loch located a few miles from the distillery). The Staoisha 9 year old presented here, distilled on September 11, 2013, was finished in two Pinot Noir butts (No. 2 and 3) and bottled by Signatory Vintage in “The Un-chillfiltered Collection” in January 2023.
Aroma : peat, iodine, barley malt, cherries, strawberries, orange peel, vanilla, caramel, white pepper and a trace of Westphalian ham.
Palate : peat smoke, roasted peanuts, vanilla, salted caramel, cherries, red currants, blood oranges, white pepper, allspice and toasted oak.
Finish : quite long, with notes of peat smoke, multi-berry jam, vanilla, caramel, pepper and salty breeze.
