Signatory Vintage Whisky Co., founded in 1988 by Andrew and Brian Symington, is today a leading independent publisher and distributor of whisky, widely respected by consumers.
Signatory has a tradition, highly valued by whisky lovers, of labeling each cask strength edition with information about the cask number and type, the date it was filled, bottled and the number of bottles to which the release is limited. The Caol Ila presented here was distilled on November 16, 2009 and aged in a bourbon hogshead cask (no. 321158) for over 13 years. The whisky was bottled on January 12, 2023 at cask strength (58.3% abv), natural color and without chill filtration in the prestigious Cask Strength Collection, in an edition of 278 bottles.
Nose : peat smoke, sea breeze, barley malt, vanilla, sea salt caramel, eucalyptus drops, pears, apples, green bananas, lemon pepper and toasted oak.
Palate: True to the aroma, vanilla, apples, peaches, mirabelle jam, lemon peel, salted peanuts, lapsang souchong tea, a touch of pepper and cinnamon and peat smoke in the background.
Finish : quite long, smoky, with notes of vanilla, caramel, orchard fruit, lemon peel, white pepper and oak.
