Biostilla Organic Premium Gin / 37.5%/ 0.7l

Biostilla Organic Gin is produced at the Walcher Distillery. The Walcher Estate Distillery was built in 1966 by Alfons Walcher, a member of a family of nine generations who have been involved in distilling.

The company is based in the fruit region of South Tyrol, where the climate is perfect, guaranteeing 280 days of sunshine a year. Its product range includes fruit brandies, liqueurs, grappa, aperitifs and gin. The base of the latter is a grain spirit distilled from organic wheat. The gin formula lists berry wild juniper, coriander seeds, sage flowers, orris root and elderflowers, but we are not sure if this is a complete list. The botanicals are macerated in the aforementioned spirit and then re-distilled. Before bottling, the distillate is diluted with mountain water from the Italian Dolomites to 37.5% abv.

Biostilla is a mild gin with an aromatic bouquet combining notes of juniper, pine needles and citrus. In taste, stronger citrus tones, a bit of nutmeg, pine needles and a hint of fragrant elderberry. We strongly recommend tasting it with just an ice cube or with Fentimans Elderflower tonic with the addition of lime.
