In early 2018, Diageo, owner of the George Dickel Distillery in Tullahoma, Tennessee, changed its name to Cascade Hollow Distilling Company.
In fact, it was a return to the original name; in 1884, Dickel and his brother-in-law, Victor Schwab, bought a stake in Cascade Hollow Distillery. Dickel Tennessee whiskey is distilled from a mash of 84 percent corn, 8 percent rye, and 8 percent malted barley. Like Jack Daniel's, it is charcoal-mellowed, but while Jack Daniel's passes every drop of distillate through a 10-foot bed of maple charcoal, Dickel fills vats of charcoal for about a week. The Superior Nº12 Brand presented here is blended from distillates aged for 8 to 10 years.
Nose : rich popcorn, vanilla pudding, caramel, raisins, honey, baked apples, orange peel, apricots, cinnamon and charred oak.
Palate: buttered popcorn, cinnamon-dusted apple pie, vanilla, caramel, milk fudge, honey-roasted nuts, a pinch of pepper and oak.
Finish : long, dominated by corn in various forms, vanilla, caramel, honey, dried fruit, notes of cinnamon, pepper and oak.
