Glenallachie Distillery, based in Speyside, is equipped with two pairs of stills and can produce 4 million litres of alcohol a year.
Until 2017, it belonged to Chivas Bros., a subsidiary of Pernod Ricard, and distilled for the group's blends, mainly the Clan Campbell brand. It is currently owned by Billy Walker and his two partners, who began promoting the GlenAllachie brand (in their own style) in the summer of 2018. The GlenAllachie Cuvée Cask Finish presented here is a whisky distilled in 2009, aged in American oak barrels and finished in barrels from four red wines (French and Italian, including two Premier Crus). The term "cuvée" comes from winemaking and refers to blending. The whisky was bottled in 2022 as part of the "Wine Series" in an edition of 6,800 bottles.
Nose : orange blossoms, black cherries, blackberries, plums, currants, hazelnuts, dark chocolate, espresso, cinnamon, black pepper and a trace of lavender.
Palate : dark chocolate, raspberries, blackberries, red currant jam, black coffee, roasted almonds, orange zest, black pepper, ginger, oak and a hint of licorice.
Finish : medium long, with notes of mixed berries, plums, raisins, dark chocolate, black pepper, licorice and oak tannins.
