Dalmore Distillery, based in the northern Highlands, has been producing whisky since 1839, and since 1960 under the ownership of Whyte & Mackay, a renowned producer of blends (in 2014, Whyte & Mackay's assets were taken over by the Filipino concern Emperador Inc.).
The Dalmore single malt character is often attributed to its use in sherry casks, although a significant proportion of the spirits start their maturation in bourbon casks. Dalmore 18 years old is another super-creation from Whyte & Mackay’s legendary blender Richard Paterson. After a primary maturation in American oak casks, the whisky was finished in Matusalem Oloroso, Gonzales Byass sherry casks. Dalmore 18 years old debuted in 2009; in 2015 it won a gold medal at the Hong Kong International Wine & Spirits Competition.
Nose : rich, vanilla, toffee, dark chocolate, bitter orange jam, plums, cinnamon, cloves, licorice, toasted almonds and sherry-soaked oak.
Taste : complex, chocolate-coated raisins, vanilla, honey, coffee, candied citrus peels, roasted nuts and almonds, licorice, nutmeg and subtle oak bitterness.
Finish : long, with notes of dark chocolate, honey, vanilla, licorice, dried tropical fruits, nutmeg, cinnamon and oak.
