The Single Malts of Scotland, a series of whiskies from the Elixir Distillers portfolio, debuted in 2005.
The company was founded by brothers Sukhinder and Raj Singh, whose online store The Whisky Exchange has been operating since 1999 and offers over 8,000 spirits (as of 2021, it is owned by Pernod Ricard; the amount of the contract was not disclosed). In autumn 2019, The Single Malts of Scotland were expanded to include the Reserve Cask line. The whiskies included in it are small batch editions blended from several barrels and bottled at 48% ABV. The barrels are selected by Oliver Chilton. The Caol Ila 8 years old presented here, distilled in 2014, is a blend of six barrels of American oak released in 2022 as part of the ninth series (Parcel No. 9).
Nose: sea breeze, peat smoke, smoked bacon, lemons, bananas, grapefruits, vanilla, caramel, licorice, cinnamon, ginger and sea salt.
Palate : slightly oily, grilled meats, salted caramel, vanilla, lemons, limes, blood oranges, white pepper, ginger, cloves and oak.
Finish : quite long, with notes of peat smoke, vanilla, sea salt, lemon peel, white pepper, ginger and oak.
